Preheat the oven to 180C (160C for fan oven). Line 2 baking trays with parchment/baking paper.
In a large mixing bowl, cream together the softened unsalted butter, caster sugar, and light brown sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

Gradually add the self-raising flour to the mixture, stirring until a smooth dough forms.
225 g self-raising flour
Fold in the chocolate chips until evenly distributed throughout the dough.
100 g chocolate chips
Using a tablespoon or cookie scoop, portion out the dough and roll into balls. Place the dough balls onto the prepared baking trays, leaving space between each one for spreading.
Flatten each dough ball slightly with the back of a spoon or your fingers.
Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges.
Remove from the oven and allow cookies to cool on the baking trays for a few minutes before transferring them to a wire rack to cool.
